How to prepare simple pomelo salad (South East Asia style)?

On 20160127, I was enchanted by beautiful Chinese pomelo and wondered if I could consume it given my current health challenge. Indeed, it’s recommended to relieve nausea.

Herein is my designed recipe that I simplified from recipes by The Restaurant Fairy TM, Andrea Nguyen, and Rasa Malaysia.

Materials:
1 pomelo, peeled, skinned and pulp removed

1 red onion/shallot sliced

1 red pepper/tomato diced
1 carrot, peeled and cut into fine shreds
Optional yet attractive ingredients: shallots, cilantro, roasted peanuts, fried onions, peanut butter, shrimp

Methods:
Make a dressing by mixing 2 tbsp fish sauce + 2 tbsp honey + 1 tbsp brown sugar + 3 tbsp lime juice
